Mission

Provenance is usually discussed in relation to ingredients, but many of the same questions can be applied to drinking water.
Where does it come from? How is it treated? How is its quality verified? How is it handled? How far does the finished product travel before reaching the table?
With AYR Water, those questions become part of the operating model. Incoming water conditions are assessed, the treatment configuration is selected around the property, and the water is treated, chilled and carbonated on-site before being served in reusable glass bottles.
The process is supported through commissioning, water-quality verification, bottle-handling procedures, preventive maintenance and ongoing technical support. The purpose is not to create another consumer water brand, but to establish a professionally managed restaurant water operation.

AYR is deliberately designed to operate behind the guest experience. The treatment equipment, chilling, carbonation, technical service and maintenance are provided by AYR Water, while the restaurant determines the table presentation.
Bottles can carry the venue’s own identity, or remain intentionally unbranded. No AYR branding is required at the table.
This is particularly relevant for chef-led and fine-dining restaurants where every visible element of the guest experience is selected deliberately.
LOCALITY IS AN OPERATING PRINCIPLE
Locality is not only about ingredients. It can also influence how a restaurant thinks about the products that repeatedly enter its operation.
Finished bottled water requires regular purchasing, transport, delivery, storage and handling. Producing water on-site can shorten that cycle considerably by moving preparation closer to the point of consumption.
Depending on the existing supply model, restaurants can reduce bottled-water deliveries, finished-water inventory, storage requirements, packaging movements and dependency on external bottled-water suppliers.
A shorter supply chain can create both operational and environmental value.

LOCALITY AS A CREATIVE FRAMEWORK
Locavore NXT takes locality beyond a sourcing preference. Its approach is built around working closely with nature, developing local ingredients and challenging the assumption that products need to come from elsewhere.
Its culinary philosophy is deliberately local: ingredients are grown, foraged or sourced in Bali and across Indonesia, with the kitchen operating around a no-import principle.
That raises a relevant question for drinking water as well: does a finished bottled product need to be repeatedly transported to the restaurant if premium still and sparkling water can be produced professionally on-site?
